Seven Swans Creperie has found a brick and mortar home! After two years of traveling all over KC selling artisan crepes from our little vintage trailer, we are putting down some roots (ironically and delightfully in view of the old Missouri Carriage Company) in the Westside/Crossroads neighborhood of KC.

Throughout human history, community has centered around the experience of food. The mission of Seven Swans Crêperie is to be a small part of that story by offering our fellow travelers a sense of belonging in space and time. Our passion is to feed people the most delicious, nourishing and comforting food we can while creating an inclusive environment for creativity and connection.

“Like most other humans, I am hungry...it seems to me that our three basic needs, for food and security and love, are so mixed and mingled and entwined that we cannot straightly think of one without the others. So it happens that when I write of hunger, I am really writing about love and the hunger for it...and then the warmth and richness and fine reality of hunger satisified...and it is all one”

It has been such incredible and humbling dream bopping around the city serving you crêpes and becoming friends, hearing your stories, sharing ours. We have been apart of some of your most special and momentous days, your Sunday family traditions or a Saturday famer's market treat. Creating even further opportunity for connection to each-other, KC, and the earth in this new space is the absolute greatest honor I could imagine. I can't wait to open these doors!

While staying true to our vision of a simple, nourising and comforting menu of crêpes, we are so excited to be expanding both our food and beverage options including a selection of house made baked goods, soups, kombucha on tap and coffee drinks. We are also thrilled to be offering an expanded vegan menu. We are passionate and committed to a local and organic economy of eating that honors both its growers and eaters in every step of production. We will continue sourcing the highest quality (organic wherever possible) ingredients and partenering with local farms for the freshest, most scrumptious produce.
All of these things require a lot of up front investment and, as happens, our humble budget has run into some significant unanticipated expences. We are striving to outfit the business with primarily used and repurposed materials to keep both the budget and the footprint minimal.
Here is a gist of our remaining needs:
Coffee/tea equipment, cups, etc : $10,000
Kitchen appliances: $6,000
Completion of build-out projects: $7,000
Wages and Labor: $2000
Misc. expenses: $5000
“...but I still think that one of the pleasantest of all emotions is to know that I, I with my brain and my hands, have nourished my beloved few, that I have concocted a stew or a story, a rarity or a plain dish, to sustain them truly against the hungers of the world.”
