As the month of January is coming to an end I'm evaluating when I can reasonably open the doors and complete the work that still needs to be done. I have been saying mid-February or early March, and at this point, that is still a possibility depending on how this weekend pans out with the weekly orders.
Each week orders have increased and I've been able to accomplish more tasks like getting the floors professionally cleaned, getting the kitchen licensed with the Health Department instead of doing weekly inspections (though I will be honest, I love having inspections often so I know the kitchen is operating at a high standard!), and preparing to paint the walls.
What's left is mostly working on the front of the store, which is in progress. This week I began sanding down the walls so I can prepare to paint. After painting, I will build the shelving myself at our Foundry. After that, it will just be a matter of acquiring inventory and preparing items to fill the coolers. We're almost there!!!
