Gluten-Freedom Bakery's mission is to allow EVERYONE the Privilege to Indulge regardless of their dietary needs or restrictions. 1 in 10 people have Celiac Disease, which requires a gluten free diet in order to heal and live a full life. Countless other individuals struggle with other food allergies, sensitivities, or other health conditions that can only be controlled by eliminating certain foods. At Gluten-Freedom Bakery we bake all the foods you love and miss without the ingredients that may give you issues like; gluten, dairy, soy, corn, egg, sugar, etc.

Being the ONLY bakery in the South Texas Crossroads Region that accommodates food allergies, we serve 7 local counties with a retail trade area of over 250,000 people. We also serve many customers outside of our local counties that come from Austin, San Antonio, Houston, Corpus Christi, and even out of state.

Before COVID Gluten-Freedom Bakery was located inside a small commercial kitchen which allowed us to bake and deliver items to several shops throughout the local counties making it convenient for customers from all over to get their hands on the foods and products they needed and wanted. Operating from a commercial kitchen also allowed Gluten-Freedom Bakery to expand it's menu to providing more than just baked goods but full meals to its customer base. Giving people the freedom and ease of mind of having a family meal ready to pop in the oven without the added stress, worry or work. The commercial location also entitled Gluten-Freedom Bakery to ships its products to customers that were not local, making it easier to reach the people that really need it. However, due to COVID and the changes it made on the world, Gluten-Freedom Bakery had to close it's commercial kitchen and move back to home-based business which eliminated all the conveniences listed above.

Gluten-Freedom Bakery is owned and operated by Miranda Wallace, a single mother of two. Miranda is a one women show that has grown Gluten-Freedom Bakery from it's start as a home-based business in 2014 to a commercial bakery in 2017 back to a home-based business in 2020. Miranda only closed the commercial location after COVID hit due to having to remote teach her two children. Unable to maintain the needs of the bakery on her own while also being a full time mother and teacher, Miranda made the decision that was best for her family at that current time. Now with her children back in school, Miranda and the continued customer base for Gluten-Freedom Bakery is ready to operate again in a commercial kitchen so the needs of the customers can be met.

Gluten-Freedom Bakery is seeking $10,000 in funding. The funds will be used to get Gluten-Freedom Bakery back into a commercial kitchen. Miranda owns an unfinished building that is being transformed into the new commercial home of Gluten-Freedom Bakery. With most bakery equipment, water, septic and electrical already on site, funding will be used on buildout supplies for the building such as; insulation, plumbing and electrical hookups, sheetrock, paint, vent hood, A/C-Heat unit, etc.

  • Will funds be used to buildout the commercial kitchen only? Yes all funds will be used to build out the kitchen and get it operating. If there are any additional funds then that will be used to purchase supplies to stock the kitchen.
