I use to be part owner of The Spanglish Vegan and now I am the owner of The Caribe Vegan. Its simple, the message is exactly the same. You can still see Two Platanos and a Dream plastered on the side of the truck. I still want to provide flavorful island dishes just hold the meat.
I have been vegan 4 years now. I was diagnosed with an auto immune illness that led me to 7 hospitalizations within 4 months and eventually a wheelchair #goodtimes
My doctors were convinced my walking days were over, but I had other plans. I went raw vegan and my walk turned into a wobble that then turned into limp. Eventually, I wobbled into a boxing gym and the trainer instilled a resilience and discipline that I am still use today. Look at me now, pulling my hair out in the joys of entrepreneurship, but I wouldn't have it any other way.
My mission with the The Caribe Vegan is for my story to be the lesson. I want to teach people to make better choices now while its an option and not an obligation.
