I want to share my crowdfunding fundraiser campaign with you.  I want to show you what I am building, & with the past year’s craziness & being behind schedule. I am really trying to reach out more than ever to find some extra support & help.

Within my campaign you will read details of my journey to finding the space for GRACE in VA, my vision of what I am creating, The work that has already been completed at the space, my 3 decade culinary experience, & my many years of working at & opening some of the top restaurants in NYC & throughout the country, to what GRACE goals are and what the funding will be used for.

I have been working for a couple of years extremely hard on renovating a historical old Confectionery store from the early 1900s. Located in the neighborhood of Church Hill in Richmond, VA.

GRACE will be so much more than just a restaurant. I am working on building a better food service business system model, for ourselves & the Earth. Encouraging sustainability, balance & community, through the connection of food. 

GRACE, will be the first woman owned & operated sustainable, zero foodprint, urban garden to table cookery + Market in Virginia & the surrounding states. Using freshness & heart with old farmhouse, seed to plate traditions & techniques. Creating an innovative approach to a more thought through, vegetable forward, conscious dining experience. 

I know this past year, into this current one, has been challenging for all of us in so many ways. Personally to professionally, loss, anxiety & feelings of safety & security. Wouldn’t it be great to believe in something for positive change? To watch something grow that will impact so many? 

Collectively we can create a community for change & more awareness, dedication, & passion for the local farm, fresh sustainable food movement, & increasing demand for affordable, fresh local products & ingredients. Such a necessary need to help better our lives & our surrounding environment to prosper longer.

Dearest Contributors,

This has been a long time coming.

I’ll be honest. I’ve had a hard time trying to figure out when the right time was to release my crowdfunding campaign. Through this past year, our world, our country, our city, and ourselves have been through so much. From personal to professional, there have been struggles, anxiety, and an unknown like we’ve never experienced. The pandemic has changed and challenged the structures and patterns of our lives. Some of this has been extremely painful--the loss of loved ones, jobs, businesses, feelings of safety, and security. However, there is also an undercurrent of grit, determination, and resilience, as businesses and the people who run them adapt to the “new normal,” finding new ways to bring the joy of their product and experience to the customer.

Not only is there a call for us to reevaluate the day-to-day approach, but we are also being forced to slow down and engage more with our impact. Through this there is a further highlighting of what needs to change in order for us, restaurants, and foodservice, to engage with the world, and our food system, in a more balanced and sustainable way. Chefs have the opportunity to serve as a model for the culinary community, and the general public alike, by purchasing seasonal, sustainable ingredients, and transforming these ingredients into delicious, approachable dishes. The greater culinary community can be a catalyst for positive change by creating a market for thoughtful food and helping preserve local farming and fishing communities. This is what I, as a chef, and as a business owner, and GRACE, as a restaurant, will strive to do. Food is fundamental to life, nourishing us in body and soul. The preparation of food strengthens our connection to nature, while the sharing of food immeasurably enriches our sense of community. By honoring the source, life, and journey of our ingredients, we not only show respect to nature but to ourselves as well, finding nourishment in food that benefits both our bodies and the Earth.

The start of a new year, this new beginning, seems like the perfect time to launch into a journey towards something we can all look forward to, believe in, and be nourished by--an experience to feed our hearts and our stomachs. Those of you who know me have seen the hard work, sweat, tears, love, determination, and, most of all, perseverance that has already been put into GRACE. There hasn’t been a day through the last few years and all the obstacles they brought that I’ve thought -- “I have made the wrong decision.” All I think is “How do I keep moving forward? How do I keep this momentum?” The answer is I just keep pushing, finding the how within myself, my passion for this project, and the support of those around me. 

The property is so much more than a building. She has a history, a story, just like myself. I feel our stories now linked, fueling my desire and determination to breathe life back into this historic space through the birth of GRACE. With every door that has closed, every letdown I’ve experienced, the fire in my belly to make this dream a reality has only grown stronger. I have established an incredible support system of people who believe in GRACE--I cannot thank you enough for all the encouragement and love you have given me through these past few years! This is now not only my life’s dream but has become their dream as well. This is not just for me, but for them, and all the other incredible people who have been and will be a part of this. 

This is why GRACE and I need you more than ever. In order to reach our full potential, we need others to join us who believe in hard work, determination, the beauty that comes from struggle, the finding of connection. We need to reconnect. GRACE will be that place. Reconnection with our food and food sources, ourselves, and each other. Together, we will build and strengthen our relationships, we will embrace what GRACE has always offered, an earth-to-table culinary experience honoring the food source, viewing cuisine as a bridge from the natural world to humanity’s tables, cultivating a sense of place within our ecosystem.  Our focus will always embrace local ingredients, always offering warm service and an exceptional culinary experience. WHO I AM

I have been in the restaurant industry for almost 3 decades. Over these years, I have watched the industry grow, change, and flow into a diverse field of opportunity. In the last 13 years, I have become an established chef and restaurateur in the New York City area. From opening and running five restaurants as Executive Chef, to consulting on different culinary projects, to currently running my own solo pop-up dinner series, Gather for GRACE.To now spreading the story of my own concept, GRACE. 

I have worked in every aspect of the restaurant. From my first job as a dishwasher at the age of 14 to a Maitre‘d of an extremely busy steakhouse at 16, a server, a bartender, a manager, to working my way through the back of the house from dish to prep cook to Executive Chef. After running many kitchens, small to large restaurants.  I have been acknowledged by James Beard, Michelin guide recommended, awarded a Michelin Bib Gourmand.  I am also recommended by The New York Times and featured in multiple notable worldwide publications, cookbooks, and television shows. 

I have been taught, influenced, inspired, and motivated by working closely with many culinary art professionals, culinary historians, and world-renowned amazing chefs. Such as Julia Child, Jacque Pepin, Lidia Bastianich, Michel Roux, Missy Robbins, Gabrielle Hamilton, Jasper White, Jody Adams, and Patricia Wells. 

They have all pushed me, pulled me, wowed me, guided me, and gave me a chance to grow, strengthen my craft, and have allowed me to move forward in my career.

CHURCH HILL PEOPLE'S NEWS ARTICLE 2017

MY STORY

In the year 2016, after 12 years of opening and running many restaurants in New York City. With the closing of Dear Bushwick, a Brooklyn restaurant where I was the opening Executive Chef for 4 years. Left me at a crossroads of contemplation of what's next for me? 

After applying to many wonderful executive chef jobs, scouting out consulting & freelance gigs, to finding out my heart wasn't in that direction anymore. I started to put all my efforts towards a lifelong dream of owning my own restaurant. It began with dinners called Gather for GRACE, a pop up dinner series of thought through food. Spreading my story through food. To bring my vision of having a brick-mortar restaurant called, GRACE, one day.

At the beginning of 2017, A year later of Gather for GRACE. I visited a friend in Richmond, VA. Where I dined at great restaurants, hiked along the James River, and explored the beautiful city. Before flying back to NYC, my friend said “you should do one of your pop ups down here, your food story would be well received.” I pondered and started to do some research.  Diving myself into local food blogs, newspapers, magazines, pop ups, and restaurants.  Reading about the amazing local chefs, to the history of food in Richmond.  

After celebrating my 40th birthday. I found myself more clear-headed and driven,  Motivated to make a change.  Progress with my idea of GRACE into a brick and mortar. While reading a Richmond Magazine food blog I came Across a link for a property for sale in the neighborhood of Churchill. I opened to a funky, miscolored, strangely shaped property of 401 Chimborazo Blvd. I immediately got butterflies and  I said out loud “This is my restaurant!

The next day I rented a car and drove to Richmond to tour the property. Getting there a little early before meeting the realtor, I walked around the property, took in the sounds, the smells, the neighborhood, the area.  Peering through the small front windows, I opened my notebook and sketched out a floor plan.  The building and I had a kismet connection right away. I could see GRACE here in full working beauty.

Before driving straight back to NYC. I walked over to Chimborazo Park a block away from the property. I sat on a rock at the edge of the park overlooking the river & the train tracks breathing it all in.  Meditating on what I was feeling. Excitement, joy, fear, calmness, clarity, and hope.  I turned my head to the sky where two hawks flew in a giant circle in the air around the hazy late winter sunbeams.  With one more deep breath in and exhale I took my gaze to the street sign beside me, it read, GRACE street.

401 Chimborazo Blvd., Is on the historical national register as one of the oldest commercial buildings with a dwelling upstairs in the Church Hill area. Once a confectionery store in her hay day in the early 1900s owned by Hiram H. Herbert. Unfamiliar, unclear of the exact look of what the building once looked like. Only a written description of the materials and design used is available. I hope to restore her to as close as to her original state using the guidance of the Richmond Historical Handbook Guide.

After many months of visiting, and researching. I have fallen deeply in love with Richmond, Virginia. An up-and-coming city all around. Over the last six years, it has grown quite the reputation of being a great city with a solid food scene. Creating a huge demand for more Culinary Professionals and businesses. 

The property is located In Church Hill, the oldest neighborhood in Richmond.  A neighborhood that is striving so much right now. USA Today rates Church Hill as being one the top 10 up-and-coming neighborhoods in the U.S.  Nestled with tree-lined streets, walkable to downtown, local restaurants, historical homes, churches, and two beautiful parks overlooking the James River. It's beautiful, peaceful, growing, and the demand is there.

The community of Church hill and Richmond has had such a tight sense on preserving the historic character, and history of the neighborhood. This has existed here going back to the families that first dug in to save the neighborhood many years ago. With Church Hill’s growing footprint and increasing the destination dining area, along with the business growth of local establishments, the civic-minded homeowners, to the visitors, to the young professionals, and the families that are moving to the area. 

This opens up the need for fresh local produce and food establishments in what was once called the “food desert” of the city. With the revitalization and expansion of the Church Hill neighborhood, the new builds of The Reynolds Culinary and Hospitality Management College, The Bon Secours Richmond Health System, & The RVA East End Festival coming just a few blocks away from this location, makes, GRACE a great addition to the future growth of the area, for the community that lives here and to the city of Richmond, Virginia.

PROPERTY RENOVATION PROGRESS

Since early 2017, I have invested myself fully in this property, to Richmond, and to the community of Church Hill.  I have intensively studied the property and the area. I’ve spent a year and a half going back-and-forth from New York City to Richmond as much as I could.  Working on the property, doing walk-throughs, meeting with inspectors, architects, contractors, engineers, the city, with neighbors and locals. Setting up connections with vendors, farms, and researching resources. 

As of late 2019, I have relocated to Richmond. Fully submerging myself completely into GRACE. Making, GRACE structural sound and safe for the future of many many years to come. 

Most of the work thus far has been done by myself, with the help of a couple of great friends, some neighbors, and my new contractor. Being more than just a restaurant building. I will also be occupying the dwelling above, as my residence. Allowing me to be up close and personal to all needs of the business.

GRACE

GRACE will be the first 45 seat, sustainable, zero-footprint, garden-to-table, urban farmstead restaurant + Market in Virginia. Utilizing local and seasonal ingredients prepared using old farmhouse-style techniques and traditions. Transforming them into thoughtful, delicious, vegetable-forward dishes.  Bringing affordable, seasonal, local foods to your table in a warm and elegant atmosphere. Not only will GRACE operate as a neighborhood restaurant, we will also offer a morning market of home garden-grown produce, in-house made & local small-batch specialty items, beverages, and curated provision goody boxes, all for take away. 

GRACE will embody approachability, with a service-focused staff, catering to a wide range of people from the surrounding community of Church Hill, to the greater Richmond area, as well as prevailing as a destination restaurant for visitors from far and wide.

MY VISION

GRACE is my vision of using freshness and heart with a focus on seed-to-plate traditions. Creating a modern approach to a more balanced & ingredient-forward farmhouse dining experience. Bringing the human experience full circle and encouraging balance and community through the connection of food. 

GRACE is a lifelong dream and goal of mine. Developing over many years of research and exploring through my travels and kitchen experiences. I have been creating, cooking, tasting, and testing dishes that I would serve at GRACE’s dinner table with families, friends, new and old, for most of my life. Inspired by ingredients that are surrounding us at the present moment of the season’s bounty. From the waters to the fields, and from the earth. Using old farmhouse techniques with simplicity and refinement while still keeping the ingredient to stand boldly on the plate to be intensified by its own flavor through innovative thought and love.

GRACE’s working farmstead style, vegetable-forward, zero foodprint, whole heritage, garden to table dining concept, is in a category of its own here in Richmond. With the on-site garden sown with heirloom seed saving grown produce. This will help sustain the supply of fresh produce for the restaurant as well as Morning Market for the community. The market will not only provide daily fresh produce in the midst of a Church Hill “food desert,” but also small-batch products, pantry items, drinks, flowers, snack boxes, and curated provision goodie boxes for take away.

GRACE has chosen the circle to be its symbol, both to be and to highlight our point of focus, constantly setting us and our mission to refresh, finding our full-circle moments. Balance, unification, and wholeness will be represented through our many food and beverage programs. Reiterating the idea that we, as a restaurant, have a place in the circular nature of the Earth, inclusive of the universe and cycles of time, specifically the seasons, the food, and Earth lifecycles. Our guests will experience this through our ingredients, whether they are sourced from the GRACE garden or from local farmers, fishers, artisans, purveyors. Strengthening the relationships we will build with those we work with through Virginia and the East Coast & lessening our carbon footprint.  We will aim to move constantly, as a circle, in grace during our daily execution from the kitchen to the market to the front of the house, making our guest experience affordable and elegant, simple and flavorful, impactful and memorable.

  • A zero food/waste print strategy supports all three of the generally accepted goals of sustainability, economic well-being, environmental protection, and social well-being. Saving money, lower overhead, extra profit going back into the business.

The Importance of an onsite Composter Converter Machine 

GRACE’s goal to help our business reach zero waste is to have an on-site electric composter. Helping us divert food waste from the landfill, reducing the amount of methane gas generated from organic waste.  Using a compost converter machine at GRACE is a natural and efficient process of local composting which allows for significant reductions in waste volume, savings on waste management costs, and a final product that is reused as a fertilizer and soil conditioner. Decreasing carbon emissions and one’s carbon footprint to a simple and effective way for our business to contribute to a greener and better world.

Turning food waste into compost produces a nutrient-rich soil amendment that can be used on GRACE’s garden, greenhouse, landscaping, lawn, plants and given away to our community, our growers directly or to other local restaurants in order to cut out the middlemen.

Centered around a wood-burning hearth cooking grill, our open kitchen tells a new story, Through the connection of nature, community, food & sustainable awareness. Inspired by ingredients that are surrounding us at the present moment of the season’s bounty. From the waters to the fields & from the earth. Using old farmhouse seed to plate traditions & techniques, Focused around freshness & heart. Creating an innovative approach to a more thoughtful, delicious, vegetable-forward, conscious dining experience.

Our menu will be constantly changing according to the freshest products available at the moment. Equally focused on vegetables and proteins. That we will move in, full circle and grace, in our daily execution to make our guest's experience affordable, simply elegant, flavorful, and memorable. Built out Virginia soapstone, in a horseshoe shape allowing all to sip & socialize soil together comfortably while enjoying Vibrant, Refreshing, Fresh, Classic, innovative, exciting, foraged, small-batch, cocktails, wines, local cider & beers, along with delicious curated nonalcoholic concoctions.

GRACE FOOD STYLE

GRACE food style is personal, it tells a story. Takes you on a journey from farmland to the sea, thought through, resourceful, inventive, simple, modern, and wholesome. Food with refinement & technique. Food that will satisfy and nourish you. Leaving you full & complete for the moment. 

Ingredients that are surrounding us at the present moment of the season’s bounty. From the waters to the fields, and from the earth. Using old farmhouse techniques with simplicity and refinement.  while still keeping the ingredient to stand boldly on the plate to be intensified by its own flavor through innovative thought and love.

GRACE is not recreating the wheel, just enjoying putting things together that we would serve at our dinner table with friends and family, ingredients that are surrounding us at the present moment from the waters, to the fields, and from the earth. To start a conversation about when you had this last. Where you were or are in your life.

GRACE MORNING MARKET

Open during morning prep hours, spread out amongst our dining room, baskets are filled with our garden grown & local farm produce, shelves of house-made & local small batched pantry items & sustainable gifts. Coolers of Beer, Wine, Ciders & freshly made beverages. Carafes of coffee & tea, to buckets of fresh cut flowers along with crates of packaged snacks & curated provisions goody boxes.  All available for take away.

This will help cover a huge demand of the “food desert” currently happening in the Church Hill neighborhood. 

GRACE OUTDOOR DINING

Situated at the front of our garden nestled under a canopy of twinkle lights strung across tree branches, sits cozy lounge chairs & benches. Circled around an open fire pit, where one can sip & enjoy a delicious beverage or two.  For a snack or a light meal gather on our side yard tables with lovely views of our growing goods & Chimborazo Blvd. 

GRACE GARDEN

Cultivated in our backyard, lays row beds of hand-turned soil, nourished by our in-house made compost from all of our food waste, sown with heirloom seed saved produce, bathtub grown grains & beautiful flowers, is our on-site garden. Helping to sustain our restaurant, greenhouse & our morning market.

To get an idea of what we need to make this possible, please see below.

GOAL FUNDING BREAKDOWN 

$105,000 is required to fund the remaining build-out & historical renovations of the space as well as to purchase the rest of the furniture for the dining areas, patio, landscaping, greenhouse, and garden walk-in workspace shed. 

$71,000 will be required for the kitchen & bar build-out and equipment food waste/compost converter 

$15,000 for pre-opening & opening inventory. 

$25,000 will be required for training of employees, sick leave for staff, pre-opening management salary, small wares, and flatware.

$4,440 additional funds for marketing, permits, and legal & professional services 

$12,560 IFundWomen Crowdfunding campaign fees 

Estimated total of funds: $233,000

MONDAY EVENING GATHERINGS

GRACE will be open on Mondays, a day most Richmond restaurants are closed. Hosting a Bread & Circus Monday, an evening of Music, Food specials, & Cheer!!

This will give the other restaurant owners, their employees, and Monday diners in the area, a chance to socialize on a 'night off'. Contributing to a sense of community in the local industry.

RISKS & CHALLENGES 

We recognize that this call to action comes at a turbulent time. This last year has been challenging for everyone in a variety of ways--emotional, mental, physical, and financial. I have hesitated on launching this campaign and asking for the necessary financial assistance because of the confluence of social, political, and global events. However, the time to advance towards the new is now. We must start pushing forward on projects that will both give back a sense of comfort, while also being conscious of the needs of today.

Your pledge helps build a sustainable future of food, as well as so much more! Together, we can show the restaurant industry, professionals, and eaters, that upcycling food waste is a delicious and necessary part of our future. Every single dollar is one more step towards realizing this dream

A restaurant build-out is challenging in any environment, so, no surprise, this has been one of the most challenging aspects of bringing GRACE to reality. The renovation and construction is progressing nicely, but because of the challenges of this past year, we are pushing to get it done in time. I feel confident that we will achieve this because of the support of the people around me, including those already involved, members of the incredible surrounding neighborhood, and you! 

We want to fold this external and structural support into the operations of GRACE itself. Not only have I been working hard to make connections with local farmers, food purveyors, fishers, and foragers, I then bring these connections into my menu development. I’ve used my GRACE pop-ups as testing sites for my future menu, focusing on utilizing a sustainable approach while minding the financial aspect and impact of each ingredient I use. I also want the feeling of support to extend to my staff--my servers, cooks, bartenders, managers--whether cutting their teeth on their first kitchen position or managing my bar program after years in the industry. I want this supportiveness to extend from my staff to the guest, so when you come in to dine you feel more like a welcome neighbor or friend, knowing that you will be taken care of in an attentive and comfortable way. This kind of service then leads a guest to support back, becoming a regular, recommending the restaurant to others, bringing in the financial and verbal support to grow the knowledge of and expand the reach of GRACE. This kind of support leads to longevity, so by establishing a strong internal and external support system, GRACE is here to stay.

Our primary BUSINESS goals are

1. Restore and stabilize jobs: We will employ those who have devoted their careers to the restaurant industry and felt the challenges of the last year. We also want to act as an incubator for aspiring industry professionals, providing a supportive and challenging space for them to learn and grow. For all our employees we want to do what we can to ensure stability and health, both for the industry and their jobs, as well as for them personally.

2. Participate in the supply chain of our industry: We patronize and support fellow small businesses and local farms that have suffered from the halting of their operations. We celebrate them and the products they provide.

3. Reinvent a sustainable business model: Now is the time for our industry to not just rebuild, but to reimagine our systems and our footprint. We will be cutting edge and now on what it means to be a sustainable business, for the Earth, community, and our employees.

4. Provide collective relief and sense of purpose to our community: Restaurants help create community--both in the team, they bring together and space they provide for those to gather. 

In order to realize these goals, there is still a lot that needs to happen. There isn't a day that goes by that we don't check something off the long list of things to be done. It feels like we've learned something each day of this process, now putting all the new knowledge and experience into pushing GRACE’s doors open before the summer.

Every step of the creation process has been and will be handled with care, attention, and dedication. Any possibility of delays will be communicated with honesty and transparency.

GRACE CHEF / OWNER JESSICA WILSON

Being raised on a farm, in a small town in Vermont has provided me with the knowledge and rooted views of the earth, such as the importance of seasonal, local, food, and community. Being an alumni of Boston University’s Culinary Arts Certificate Program where I have learned techniques, structure, and discipline. My many years of working and traveling in the culinary world put me at the advantage of bringing so much to the table in the Church Hill neighborhood and to the city of Richmond, Virginia. 

I am looking forward to having you all gather at these tables and cooking for you soon at my restaurant, GRACE. 

I have so much passion and dedication for the local farm, fresh sustainable food movement, and increasing demand for affordable, fresh local products and ingredients.

I have always surrounded myself with culinary arts one way or another from living and working on a farm, training and working with culinary historians and professionals, to harvesting along the seashore, foraging on a morning walk, eating bread & butter with my grandfather, to my first job at the early age of 14 as a dishwasher, personal cooking on a private yacht in the Mediterranean, to cooking on a private luxury train car traveling cross country, to growing vegetables in my Brooklyn apartment, to running many kitchens, to now opening my own restaurant, GRACE, in Richmond, Virginia. I could not see my life in any other way because simply put, I would not be full.

I am passionately committed to strive with great strength and dedication to make GRACE, a successful sustainable restaurant business while giving back to the community, to the environment, and respecting the integrity of the history of the neighborhood.

Thank you for taking the time today to read about my story and my vision. I also want to thank everyone whom I've crossed paths with for your many years of support, for your trust, and for believing in me. You have all helped GRACE and myself achieve more than you can ever imagine. And together, we will create a community of more conscious consumers, working towards a more sustainable food system and a more collective community. I appreciate all of you beautiful beings.
